"Hi guys, I'm James Hudson, am 35 and have had the pleasure of working in kitchens since I left school in '98 at the age of 15. I went straight into kitchens as a trainee and worked my way up. Having wanted to always be a chef for as long as I can remember and helping my family bake and roast all sorts I was blown away by the hustle and bustle and colourful language and characters I met along my journey in a vast array of kitchens that led me around the UK and into Greece for a period too. I have a love of all cuisines and try and take little pieces of each culture and cuisine I learn about with me onto my next project.
I am always inspired more by the street food and local kiosks than the Michelin kitchens of the world.
Having had the pleasure of joining the team here at the Honor Oak I am very much looking forward to bringing my experiences and foods from my travels with me to the customers. To hopefully take them on a similar journey I have had the pleasure of experiencing."
